Do you have those meals that you pull together when both you and your partner have been working all day and are exhausted and the last thing you feel like doing is spending an hour making dinner?
This is one of those meals for us. Thick slurpy udon noodles plus vegetables in a spicy mix of deliciousness. I like to add baby corn to the mix of vegetables. For some protein, fry some tofu before you add the vegetables. Easy, healthy, cheap, and delicious. (Also, if you don’t have a wok, a soup pot works just as well.)
