Food: Bachelorette Dinner

K was working evenings last week and when that happens, I usually stick to low-key, easy to prepare dinners. This is what I had one night: crispy breaded tofu strips (a poor substitute for chicken fingers, in my opinion, but they have a satisfying crunch), roasted carrots, and a few slices of bell pepper I had leftover from making fajitas on the weekend.
